Curried Quinoa

I don't remember where I got this recipe, but I do know it's tasty both good and cold! Try it!

Ingredients

  • 2 tablespoons olive oil, or as needed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 tablespoon curry powder, or to taste
  • 1 tablespoon chili powder
  • salt and pepper to taste

 

Directions

  1. Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes;
  2. Add quinoa and stir
  3. Pour broth into the pan and bring to a boil. Reduce heat and add curry and chili powder; cover and simmer until tender, about 25 minutes. Season to taste with salt and pepper.
